London is one entity as far as trains are concerned so you can travel to any mainline station. Depending where you are travelling from you can probably get an off peak day return which might work out cheaper than getting singles anyway. I don't mind paying a couple more quid just for peace of mind and the knowledge I am not pinned to a specific train.

Are you sure about that? So you're saying that if I have an e-ticket to Paddington for example, I could scan it at Waterloo or Euston and the gate would open? I hope you're right as that makes things a lot easier!

If your ticket says "London terminals" on it then you can use it at any one of the big mainline stations. If it specifically says Paddington you would have to check. You are better off with a paper ticket as the guys operating the gates don't understand the fares system anyway and they have no incentive to not let you through. You can't argue with a qr code though as the machines know the rules unlike the human operators.
